
This meal was always made two times a year in our house growing up; Saint Patrick's Day and because this is my sister's favorite dish, my sister's birthday. Just one of the many good reasons for having a parent from New England, is all the tasty recipes they are able to pass down.
1 trimmed corned beef brisket with seasoning packet
16 small carrots, trimmed, cleaned and cut into 1-inch pieces
16 small potatoes, peeled and cut into quarters
2 yellow onion, cut into quarters
1 small cabbage cut into small wedges
Rinse brisket and place in large pot. Sprinkle with seasoning packet. Cover with cold water and heat to boiling, reduce heat and simmer for 2 hours.
Add carrots, potatoes, and onions, simmer covered for 20 minutes, add cabbage. Simmer an additional 10 minutes or until all vegetables are tender.
Remove all ingredients from pot, draining well. Slice corn beef; place all ingredients on a platter and serve.
Menu Suggestions: Serve with yellow mustard, apple cider vinegar and dinner rolls.
